Blood orange

Blood orange is a variety of sweet orange (Citrus sinensis) whose flesh displays a red pigmentation due to the presence of anthocyanins, pigments that develop under the effect of temperature variations. The main varieties grown for perfumery and food are Moro, Tarocco and Sanguinello, produced mainly in Sicily and Spain.

Blood orange essence is obtained by cold expression of the zest. Its olfactory profile differs from that of classic sweet orange through a more complex fruity facet, with nuances of raspberry, cherry and sometimes orange blossom. It is slightly more tangy and has a characteristic fruity depth.
