Black pepper

Black pepper is the fruit of piper nigrum, a plant native to India. Peppercorns come from the berries of a climbing vine. Black pepper fruits are harvested while still green. They are then boiled and left to dry. The grains dehydrate and become wrinkled. From the same fruits, using different processing methods, white pepper and green pepper are obtained. Black pepper has many virtues. It aids digestion and the assimilation of food. It is also an antiseptic, an expectorant, and an aphrodisiac.

Black pepper, a piquant fragrance

Spices, such as pepper, are essential raw materials in perfumery. Pepper lends character, strength, and depth to compositions. While pepper brings a touch of piquancy, it also brings a hint of lightness. Moreover, pepper is found in oriental perfumes, where it offers a shyly sensual side. Its scent is of course spicy, but also dry and dusty. Black pepper is without question a warm spice of the spicy olfactory family. It is often positioned as a heart note, as in the men’s perfume Sables by Annick Goutal, where black pepper stands alone in the heart note, accompanied by immortelle in the top note and vanilla in the base note. Annick Goutal, who created this perfume for her husband in memory of vacations on the Island of Beauty, wanted an authentic fragrance. Its scent closely resembles the smell of sun-drenched sand dunes.

The pairing of black pepper with different olfactory families

Black pepper is chiefly present in oriental, woody, or chypre perfumes. This is the case for the men’s fragrance Boss Orange Man by Hugo Boss. This woody-spicy composition brings together pepper (in the heart note) with vanilla (in the base note) and coriander and apple (in the top note). With this fragrance, Hugo Boss sought to create a perfume full of energy with a strong character. Black pepper is also found alongside floral, fruity, or gourmand fragrances, as with the aptly named Gourmand Coquin by Guerlain. Here, pepper sits in the top note, with rum. Vanilla and chocolate, in the base notes, heighten the gourmand character and leave a sweet, syrupy sillage. Many fine compositions contain black pepper, such as Aromatics in White by Clinique, Poivre by Caron, or 1881 black by Cerruti.

Black pepper is a spice well known in the culinary world, but it is also used in perfumery. With a warm, dry, dusty, and sensual fragrance, black pepper draws the attention of many noses. Featured mainly in oriental and woody perfumes, black pepper also makes its way into floral, chypre, fruity, or gourmand compositions.
