Lime

Lime (Citrus aurantifolia or Citrus latifolia) is a tropical citrus fruit grown in warm regions around the world. Lime, acidic vivacity and tropical freshness

Lime mainly refers to two citrus species: Citrus aurantifolia (Mexican lime or Key lime) and Citrus latifolia (Persian lime or Tahiti lime), grown in the tropical and subtropical regions of Central America, Southeast Asia and Africa. The zest of these fruits yields an aromatic essence obtained by cold expression.

Lime essence has a very distinctive olfactory profile: bright, acidic and slightly bitter, with delicate floral facets and a herbaceous or slightly camphoraceous nuance depending on the species. Its immediate freshness and vivacity make it a highly valued top note, although its volatility is high.
