Dulce de leche
Dulce de Leche, better known as milk jam. Perfumery is a vast field that does not hesitate to plunge us back into our childhood memories to win over our hearts. This time, let us take a closer look at the famous Dulce de Leche, better known as milk jam. Enjoyed all over the world, the origin of Dulce de Leche remains little known. In France, it appears to have been created in the 19th century by a cook of the Napoleonic army who supposedly heated sweetened milk for too long before serving it to the soldiers. Once called roudoudou in France in the 1950s, Dulce de Leche won over both children and adults. As one might expect, perfumers appreciate it just as much for its sweetness as for its universal appeal.
The traditional recipe for Dulce de Leche
While milk jam is already sold ready-made in supermarkets, its traditional recipe is also very easy to make. Simply mix 1 l of fresh whole milk, a pinch of baking soda and 250 g of sugar in a saucepan, and heat it over medium heat, stirring regularly. Once the mixture begins to boil, the heat should be lowered and the mixture cooked, stirring, for about 45 minutes. At this stage, the mixture should have thickened while taking on a lovely golden color. It then only remains to pour the mixture into a jar and enjoy it. Dulce de Leche lends itself to all sorts of pairings and is just as delicious on pancakes as on bread at breakfast or on a waffle. With such ingredients, perfumery suddenly has everything it needs to win over the hearts of gourmands!

The use of Dulce de Leche in fragrances is fairly recent. Indeed, gourmand fragrances were born in the 1990s thanks to Thierry Mugler and his iconic Angel. Before him, it was simply unthinkable to conceive a fragrance smelling of an edible ingredient.
