Liqueur is a fantasy note in perfumery, belonging to the family of gourmand accords. It does not correspond to a single extractable raw material but to an olfactory reconstruction seeking to evoke sweet, flavored alcoholic beverages: amaretto, Grand Marnier, Baileys, chartreuse, and many others.

To recreate this impression, perfumers combine light alcoholic facets with sweet, fruity or spicy notes depending on the liqueur evoked, sometimes heightened with woody or vanilla notes. The alcoholic facet is often suggested rather than stated outright, to avoid too chemical an effect.

In perfumery, the liqueur note fits into gourmand orientals, sweet florals and compositions with a festive, sensual character. It brings warmth, roundness and a hedonistic dimension that appeals in evening fragrances or eaux de parfum designed for an enveloping effect.
