Candied almond
Candied almond is a fanciful gourmand note, evoking the dried fruit coated in caramelized sugar. It is not extracted from a single natural material but reconstituted by perfumers using synthetic molecules and natural ingredients. Soft, warm and sweet, it brings a pastry-like, comforting dimension to oriental, gourmand or floral compositions.
Candied almond, a sweet gourmand note
Candied almond does not correspond to an extractable raw material in perfumery. It is a fanciful note, that is, an olfactory impression reconstituted by perfumers to evoke the dried fruit coated in cooked sugar. This note belongs to the family of gourmand accords, popularized from the 1990s onward.
To recreate this sensation, perfumers generally combine molecules with milky, vanilla-like and slightly caramelized facets, sometimes paired with benzaldehyde notes — a compound naturally present in bitter almond — to reinforce the authenticity of the evocation.
In perfumery, candied almond readily blends into gourmand orientals, sweet florals or winter compositions. It brings warmth, roundness and a touch of childlike sweetness that appeals in eaux de parfum aiming for an enveloping, sensual character.
